Kale soup or
collard soup

 

Ingredients:

 

    - 1 onion
   
- 2-3 cloves of garlic
   
- 1lb kale or 1lb collard 
   
- 1lb potatoes
   
- 1 tablespoon of olive oil
   
- 10 cups of water
   
- Chorizo or other sausage

 

Way to prepare:

 

Warm up olive oil in cooking pan and add chopped onion and garlic. Cook until onion is translucent. Add peeled potatoes and cut into small pieces and 4 cups of water. Cook until potatoes are soft then mash them with handheld blender. Add kale or collard to rest of water and then bring to boil and cook until kale or collard is tender. The last step is adding sausage (optional) and salt and the spices which you like.
